Exodus - Passover Question

Hi Steve, friends,
I have been working my way slowly through the NGCS mp3s and have a question about passover. In view of the prohibition of leaven in the bread for passover, would fermented wine have been permitted or would they have used "new wine" i.e. juice? The hot climate would certainly make food preservation difficult. Was the unleavened only because they left Egypt in haste, or does it have a typology beyond that (free of sin etc)?

I understood leavening was scarce and not used as an ordinary dietary staple, to me it sounds like a sacrifice. Mannah wasn't leavening, probably mushrooms that you find out in the supermarket. Old wine(?) that probably tasted bad I don't know if they cooked or prepared meals with that.
