I just heard a sermon which made the point that the Israelites in Egypt had only a smattering of oral tradition about God and History and that they really knew no better than to follow the gods and ways of the Egyptians. And further that this basic ignorance was what Moses was "writing" into.
At least with respect to Genesis, I have always understood it to have been a rich oral tradition that was maintained strictly by the Israelites in their captivity, that they were at least trying to keep their faith in God and that Moses was mostly documenting that oral tradition.
That much of its structure and rhythm, etc., was designed to be used orally.
